The various courses offered by the Institute are of one and half year duration. The courses are as follows:

1. For courses from Srl No. 1 to 5 , the details can be had from the prospectus available in the institute on payment of Rs. 200/- or DD of Rs. 250/- payable in favour of Food Craft  Institute, Ajmer.

The initial one year theoretical and practical training is provided in the Institute. After the Final examinations conducted by NATIONAL COUNCIL for Hotel Management, students will have to undergo six months industrial exposure training in a catering establishment /hotel of repute to become eligible for the diploma. The pass out students of this Institute have been acclaimed as worthy – members of the prestigious line of hotels.


1. DIPLOMA IN FOOD PRODUCTION
Food being the most essential of human needs makes the Food Production department the heart of hoteliering and catering. Food Production is preparation of various food items. Due to the globalization, the department now is not just concerned with regional cuisines but now involves the cuisines of the whole world. Cooking is a Combination of art and science. Science plays an important role in understanding the nutrients present in the food and helps in providing a balanced and nutritious diet. Art represents the skill of preparing and presenting a dish. Food production, being skill oriented has lot of scope and opportunities in the industry. Scarcity of skilled personnel is fulfilled in various levels of kitchen. Executive Chef, sous Chef, chef-de-parties, commis, apprentices are the various portfolios which a student can be absorbed in years ahead. Hence a student who possess the required skill and knowledge will be chosen and given preference. Above all they have ample scope in other catering establishments also, like railways, hospitals, industrial canteen, Airlines etc.

Institute provided theoretical and practical knowledge, which is imparted through extensive training on a regular basis. Thus a person having the skill will always have better opportunities than others and will earn to fulfill his desires.

2. DIPLOMA COURSE IN FRONT OFFICE OPERATION

Front Office plays a vital role. Front Office is also called the nerve Centre of Hotel. It is the first department with which a guest comes in direct contact even before check in (at the time of reservation). Front office comprises of various sections e.g. Reception, Registration. Reservation. Telephone operator, cashier, Guest Relations Executive, Bell desk, Concierge etc. Besides the above sections, a student doing diploma in this department can be absorbed in Accounts and auditing section of the Hotel. The Personality and communication skill should be of highest standards. Most of the guest coming in the star hotels are foreigners and English is the most widely spoken language followed by French, Spanish, German. Besides Hotel Industry, student can opt for related fields like Airlines, Corporate guest houses, Cruise liners, Business Clubs, Public relation personnel of company, Sales and marketing executives etc. This Industry gives one the chance to serve and make contacts with the cream of the Society which certainly helps for future growth. Being front of the house department, the Front Office has wide opportunity for rising up in the hierarchy of a hospitality unit.

3. DIPLOMA COURSE IN FOOD AND BEVERAGE SERVICE

Food and Beverage Service department plays a Major role in Hotel and Catering Industry. It is the major revenue producing department of any catering establishment. The number of employees in this department are quite large. It requires extensive planning and considerable amount of skill in organizing functions. The people working in this department in various positions enjoy high scale of salaries and tips. There are various outlets in which they can be absorbed like Restaurants, Coffee Shops, Bars, Fast Food Joints. Discotheques, Banquets etc. Apart from Hotel Industry, A people of this trade can he absorbed in, Airlines, Corporate Guest Houses, Tourist Bungalows, etc. This provides wide range of job opportunities in the country and abroad which in turn ensures good salaries and bright future. Good opportunities as mentioned above are in store. The course content includes communication skill, hygienic food handling, banquets, buffets, etc. Guest satisfaction is the prime objective and thus opportunities will automatically knock the door in service industry.

4. DIPLOMA COURSE IN HOUSE KEEPING OPERATION

House Keeping plays a major role in up keeping the standards of any Hotel or Institution. House Keeping covers every area in an establishment interiors, maintenance of the premises, furnishing and decor of rooms, flower arrangements and supply of various articles to guest rooms, taking care of laundry and Linen as well as looking after the guest comfort. This department provides specialized training of up keeping premises which depicts the standard of the organization. Skill impartment and technicality in up keeping a place is provided by the Institute and will have innumerable job opportunities.

Job opportunities in House Keeping covers various posts in the department of a Hotel or catering Establishments. Scope of jobs are also in Hostels, Hospitals, Airlines, Guest Houses, Industrial Houses and Commercial Laundries etc. House Keeping being a labour intensive department, the candidate should be ready to put in hard work and have a positive attitude towards work & guests.

Eligibility: Senior Secondary or equivalent with English as a compulsory subject
Title: Diploma
Duration: One Year + Six months industrial training
Teaching hours per week: 35
Industrial Training: 24 weeks


ELIGIBILITY FOR ADMISSION :- The minimum qualification for admission is a pass in the + 2 level of senior secondary education or equivalent, with English as a compulsory subject. Admission will be subject to verification of facts from the original certificate/document to be produced by the candidates., Decision of FCI-Ajmer regarding the eligibility shall be final & binding. Even after admission to the Institute, if an applicant is at a later date found ineligible on account of supplying false information or false testimonials or having suppressed any material information, his/her admission will be cancelled and the fee paid will also be forfeited.

ADMISSION PROCEDURE :- Admission and allotment of departments is done strictly according to the merit drawn on the basis of marks obtained in the qualifying examination (10+2). The candidates who are finally selected as per the prescribed procedure will be admitted on payment of fees immediately on the declaration of selection list failing which their selection will stand cancelled. Admission will be on first come first serve basis.

AGE:- Max. 25 years as on 1st July relaxable by 3 years in case of SC/ST  students.
RESERVATION:- As per existing Government of Rajasthan norms. One superannuary seat is reserved for Jammu & Kashmir candidate
CHOICE OF COURSE: – Candidate may indicate his preference of course in the application form.
EQUIVALENT QUALIFICATION: – Candidates who have passed examination other than those mentioned above should submit equivalent certificate.
ADMISSION FORM: – Candidates should submit duly filled application form attached with this prospectus or download from this website along with following attested certificates / documents. At the time of admission certificates must be produced in original failing which the candidate will not be considered for admission.

6. 3 Pass Port size colour photographs (similar to the one pasted on the Application form/ Hostel Application / Personnel Record Form)
